Han habido multiples initiativas para mejorar los sistemas de coccion en la ultima decada en Latino America. Este estudio compara los avances de 3 paises (Peru, Mexico y Colombia). Con base en este estudio comparativo se establece una hoja de ruta que define las etapas a seguir para implementar una estrategia sectorial de mejora de practicas de cocinado en las zonas rurales de la region.

Improving cooking techniques in Latin America: Comparative study and sector roadmap
Across the past decade, many initiatives have emerged aiming at improving cooking systems in rural areas in Latin America. The study aims at comparing 3 countries (Colombia, Peru and Mexico) and discussing their respective achievements. Drawing on this experience, a roadmap is established that shows the main steps to be followed in order to set up a comprehensive strategy for improving cooking in rural areas in the region.
The studies will be presented by Arthur Laurent, CEO at Microsol followed by comments from Omar Masera, UNAM and Karin Troncoso, OPS.
